I am a huge fan of pasta but let's face it, it's not the healthiest of options. So when I found out about a pasta substitute that has a similar taste and consistency but is instead made from a vegetable (squash) I immediately tried it. I must say I was impressed with how satisfying and delicious the meal was so will definitely be making this more often from now on.
Ingredients
- 1 Spaghetti squash
- Rocket
- Coconut Oil
- Salt & Pepper
Method
- Cut your spaghetti squash in half and scoop out the seeds.
- Rub in a bit of coconut oil all over the surface of the spaghetti squash.
- Bake at 180 degrees for 35 minutes then leave to stand for 10.
- With a fork, scoop out the insides of the spaghetti squash into a bowl.
- Mix through some coconut oil, salt, pepper and top with rocket.
