Let's face it, when we get home after a long day the last thing we feel like doing is whipping up a super nutritious and healthy dinner in the kitchen. Not only that, but it can be hard to figure out what to cook. So I thought I would share with you one of my go-to recipes for day like that because not only is it super delicious and healthy but it's also quite simple and quick to make.
Ingredients:
1 Pkt Quorn Mince (vegetarian meat substitute)
1 Tub Tomato Paste1 Carrot
1 Onion
2 Corn Cobs
1 Pkt Vietnamese Noodles
1 Iceberg Lettuce

Method:
1. In a saucepan, add olive oil and onion then leave to simmer until browned.
2. Add the mince and tomato paste in with the onion and cover until simmering.
3. Add in the carrot and leave for an additional 5 minutes. Meanwhile place your Vietnamese noodles into warm water to soften.
4. Take the mince mixture of the heat then assemble the meal by placing the mince, noodles and corn in a lettuce cup.
