I have a pretty busy lifestyle; if I'm not at university then I'm at work and if I'm not as work then I'm sitting in front of my laptop frantically editing a video or writing up a blog post. This means that dinner needs to be quick and nutritious and this recipe is exactly that. This pasta dish if satisfying but also a great way to get a heap of your veggies in for the day. Not to mention it's super easy and consists of chucking some ingredients in a wok and cooking pasta.
Ingredients
- Onion
- Garlic
- Snowpeas
- Sugarsnap Peas
- Eggplant
- Zucchini
- Corn
- Capsicums
- Pinenuts
- Chilli Flakes
- Parsley
- Pasta
Method- Put pasta into a saucepan to boil
- Into a wok add onion and garlic to simmer until transparent.
- Add the vegetables and allow to simmer down and cook.
- In a frying pan on the side, cook the pinenuts in some oil then add to vegetable mixture in wok.
- Drain the cooked pasta and add to vegetable mixture.
- Sprinkle with some chilli flakes and garnish with parsley.
