Current Favourite Breakfast

Breakfast is the most important meal of the day yet it's so easy to skip out on it. I noticed that I wasn't being great with my breakfast eating lately and decided to mix it up a bit to inspire me to start the day off right.

Strawberries have come back in season meaning that I can eat as many of them as I want without making my grocery bill go crazy. Frozen fruits are always quite affordable, especially if you buy the generic Coles or Woolworths brand. Plus I always stock up when my favourite muesli is on sale, which is Jordan's....no I'm not joking, the brand of muesli I use is called "Jordan's". So yeah, there's that. This recipe is extremely filling as well since it definitely keeps my tummy satisfied until lunch time. Not to mention that it's really easy to quickly whip up while stumbling around in the early morning getting ready for work on university.

Ingredients
- Jordan's Museli
- Strawberries
- Blueberries
- Raspberries
- Vanilla Almond Milk

I definitely recommend giving this recipe a go. Well, it's not even really a "recipe" but moreso a chuck some fruit, museli and milk into a bowl. The main point of this post is to provide some breakfast inspiration since I know how many of you skip it most days. I hope this provided an idea for a quick, easy, everyday breakfast.

Thank you for reading and happy eating!

VEGGIE PASTA RECIPE

I have a pretty busy lifestyle; if I'm not at university then I'm at work and if I'm not as work then I'm sitting in front of my laptop frantically editing a video or writing up a blog post. This means that dinner needs to be quick and nutritious and this recipe is exactly that. This pasta dish if satisfying but also a great way to get a heap of your veggies in for the day. Not to mention it's super easy and consists of chucking some ingredients in a wok and cooking pasta.

Ingredients
- Onion
- Garlic
- Snowpeas
- Sugarsnap Peas
- Eggplant
- Zucchini
- Corn
- Capsicums
- Pinenuts
- Chilli Flakes
- Parsley
- Pasta

Method
- Put pasta into a saucepan to boil
- Into a wok add onion and garlic to simmer until transparent.
- Add the vegetables and allow to simmer down and cook.
- In a frying pan on the side, cook the pinenuts in some oil then add to vegetable mixture in wok.
- Drain the cooked pasta and add to vegetable mixture.
- Sprinkle with some chilli flakes and garnish with parsley.

HARVEST BOX Q&A - HEALTHY SNACKING

You may remember that in a few posts back I introduced you to Harvest Box, the guilt-free snacking company that delivers treats straight to your home or office. Last time, I posted an unboxing and review of one of their boxes so you can read that HERE if you're interested. This time I'm bringing to you a Q&A from my mini interview with Harvest Box. Read on to find out more about the beginnings of this box, breaking down the myth that snacking is bad for you and looking into the future of Harvest Box.

Where did the inspiration for Harvest Box come from?
Founders, James Scott, George Stooke and William Cook started Harvest Box because, having grown frustrated with the lack of healthy snack options in the workplace themselves, they guessed others must feel the same!
They were keen to create a business they could be proud of – a business that contributes to healthier eating choices for people at work or home. Harvest Box aims to eliminate calorie and sugar-laden quick fixes by bringing healthy snacks to you, so making the right choice becomes super convenient!
Our tagline is ‘Say Hello to Guilt-Free Snacking’ and we love making it easy for people to do just that.

How does Harvest Box work and what is your favourite aspect of it?
The process is simple – choose a delivery day, tell us what you do (and don’t!) like, and we’ll send you a box of healthy treats each week, hand-picked to suit your tastes. We think the best aspects of the service are the element of surprise, because you don’t know what you’ll get each week, and the convenience factor. It’s all too easy to resort to chips and chocolate when that 3pm slump kicks in, but if there’s a Harvest Box on your desk, there’s no need!

What kind of snacks can we expect to receive in a Harvest Box?
We’re proud to say that our range of dried fruit, nuts, seeds, crackers and treats is the biggest it’s ever been – there are 60 mixes in total. Some of our customers’ current faves are: Strawberry Milkshake (strawberries, cranberries, blueberries and yoghurt balls), We Love Nuts (roasted almonds, Brazil nuts, cashews and peanuts) and Super Mix (a trail mix featuring Queensland-grown pineapple and white chocolate).

Harvest Box seems to break down the myth that snacking is bad for you, what is your philosophy on this?Absolutely! Snacking gets a bad rap because it’s been so difficult to make good choices until recently. Choosing nuts, dried fruit and seeds over chips and chocolate takes away the guilt element and means that you can actually celebrate and enjoy a little treat in between meals. Our portion-controlled snacks keep you fuller for longer and are bursting with healthy fats, vitamins, minerals and a heap of other stuff that makes your body happy. And, if your body’s happy, energetic and not craving for anything, you’re far less likely to overindulge on the stuff that’s not so good for you.

Are there any upcoming projects or plans happening with Harvest Box?Yes, it’s an exciting time for us as we’ve just launched a range of our products in Coles Australia-wide! Rather than replacing our Harvest Box service, which is going from strength to strength, we see Snack Packs as a natural extension. They’re perfect for people who want to grab something on the go and we’ve actually designed them in response to feedback from our weekly box customers, who have told us they’d love to see our products in supermarkets and convenience stores. We’re delighted with the response the Snack Packs have had so far and we’re really glad to be making guilt-free snacking easier than ever before. Find out more here: http://www.harvestbox.com.au/HB/
That concludes my interview with Harvest Box, I hope that you enjoyed learning a bit more about the company on a more personal level. Don't forget to go check out the unboxing and review if you haven't already.

GREEN SMOOTHIE {RECIPE} + CURB CAFFEINE CRAVINGS

I confess! I am indeed an extreme coffee addict. You know, the kind of person where their life just about falls apart when they miss their morning coffee. Guilty. However, for the past month or so I have been trying to curb my caffeine cravings by replacing my coffee some mornings with a green smoothie and it's actually been working. Not only have I been able to control my caffeine addiction but I'm also getting so many extra nutrients through these green smoothies; it's a win-win. So I thought that it would be rude not to share with you all my favourite green smoothie recipe that way you can give it a go to start your mornings off right, like I have been attempting to of late.

Ingredients:
1 Frozen Banana
Handful of Spinach
1 Tbsp. Spirulina
1 Tbsp. LSA Meal
1 Tbsp. Chia Seeds
1/2 cup fruit (I used rockmelon in the one featured above)

Simply chuck all of the ingredients into a blender/Vitamix/Ninja/food processor, what have you, and then blend away. Pour into a mason jar, tall glass or whatever your preference.

There you have it...a quick and easy breakfast that's nutritious and keeps you away from the coffee cups. However, if you feel so inclined to use a coffee cup then go right ahead but make sure you pour in this green juice and not a cappuccino ;)

PUMPKIN PECAN CAKE {RECIPE}

Pumpkin, cinnamon and roasted pecans...sounds like Winter to me! I have put together this delicious recipe for Pumpkin Pecan Cake, aka the most delicious cool weather treat that will keep your sweet cravings satisfied and your tummy nice and warm. Now the recipe that I used to achieve this cake is most definitely not vegan and it's not very healthy either so it was definitely a bit treat for me. I definitely still wanted to share the recipe with you all because it turned out DELICIOUS and was such a hit with everyone. I have since made a healthier version but it turned it into a completely different cake since it's vegan, sugar free and flourless. You can watch that healthy Frosted Coconut Pumpkin Cake recipe HERE or read HERE.

HEALTHY FROSTED COCONUT PUMPKIN CAKE {VEGAN AND SUGARLESS}

If you have a sweet tooth but are trying to be healthy then this is the recipe for you! This frosted coconut pumpkin cake not only includes a vegetable but is also vegan and sugar free making it the perfect treat with no guilt attached.

Ingredients:
1/4 cup Coconut Oil
1/4 cup Margarine
1 cup Dates (finely grinded)
1 cup Butternut Pumpkin (Mashed)
2 cups Coconut Flour
3/4 cup Almond Milk
Cinnamon
2 tsp Baking Powder

Method:
#1- Preheat oven to 180 degrees Celsius. Lightly grease a 22cm round pan.
#2- Cut up the pumpkin and leave to steam for 15-20minutes until soft.
#3- Use an electric mixer to combine dates and coconut oil. Then add in the margarine until combined.
#4- Stir in pumpkin. Sift over the flour, and stir until combined. Fold in the almond milk and spoon into prepared pan.
#5- Bake for up to an hour or until skewer inserted comes out clean. Let sit for 10 minutes once taken out of the oven.
#5- Make the icing by using an electric beater to combine the margarine, shredded coconut and artificial sweetener.
#6- Top with the icing mixture then serve and enjoy.

I hope you all enjoyed this recipe. Coming up will be a slightly naughtier version of this cake because it includes dairy and sugar. It's definitely not as healthy as this recipe but is much sweeter and still incorporates pumpkin so look out for that.

UNBOXING AND REVIEW: HARVEST BOX

Snacking tends to get a bad rap but unless you're snacking on foods high in fats (that aren't natural from nuts or avocados) or sugary treats then snacking is a great part of a balanced diet. Harvest Box definitely understands the importance of snacking in between meals and offers the perfect healthy solution; portions of fried fruits, nuts and seeds delivered right to your door.

THE BEST HEALTHY RECIPES OF JORDYSCOOKING - CELEBRATING 20K SUBSCRIBERS

So recently I hit 20,000 subscribers on my cooking channel...now to me that is absolutely insane! Mainly because I started my cooking channel well after I started my beauty channel and for it to surpass my beauty channel in such a short amount of time blows my mind. Despite not being around for very long I feel like my cooking channel has changed in so many ways as I have grown as a person and my lifestyle has transformed. I started by putting up dessert recipes covered in sugar and chocolate but soon found my way to healthy snack ideas and meal prepping tutorials.

I wanted to put this post up on not only my JordysCooking blog but also my JordysFitness blog because I feel like my Jordy's Cooking channel sparked the inspiration for Jordy's Fitness because with the healthy recipes began my love for fitness and exercise too. So much so that I needed to create a whole separate blog for all the healthy recipes and fitness tips.

Without getting too mushy, I wouldn't be where I am today without starting my cooking channel because it expanded my horizons to health and fitness which without I wouldn't be as fulfilled as I am now. I also turned vegetarian between starting this channel and now which comes down to me being inspired (by starting this channel) to find out more about where food comes from and all about nutrition.

So in celebration of reaching such an amazing milestone, here are my top five favourite recipes from Jordy's Cooking, all of which are pretty recent because I feel like I've never been creating as good content as I am now.

I loved creating all these new and different healthy dinner/snack/lunch ideas because I knew that some of you would give them a go and be eating a healthy and nutritious meal.
