I cannot stress enough the importance of eating your greens! A gene called T-bet, which is essential for producing critical immune cells in your gut, responds to the food you eat-specifically leafy green vegetables! Ensuring you eat enough greens also helps lower risks of; stroke, type 2 diabetes, high blood pressure, Alzheimer's disease, heart disease, many types of cancer, eye diseases, kidney stones, bone loss, digestive problems oxidative stress. It also gives you higher antioxidant levels and higher scores on cognitive tests!
My personal favourite way of eating my greens (apart from juicing) is in stir-fry's because you can chuck basically any and all vegetables into a frying pan or wok. My usual stir-fry consists of; green beans, shallots, bok choy, pak choy, mushrooms, zucchini, asparagus, broccoli, snow pea sprouts, eggs and I cook all of this in a light drizzle of coconut oil.
As you can see above, I just roughly cut and wash all of the vegetables and then place them into a wok with a little of coconut oil. I fry the eggs in a separate pan then add them to the mixture at the end.
I like to serve my stir-fry with quinoa because it is an amazing substitute for rice, even better than brown rice as it is a complete protein; containing all nine essential amino acids. Although it's higher in carbs, it's much higher in protein and overall offers many more health benefits that rice does not.
Serve with some almonds and a sprinkle of chia seeds for some extra protein and antioxidants. As you can see, a stir-fry is the perfect healthy dinner and an amazing way of getting in your vegetable intake, especially those leafy greens!!
