Who said you can't have pancakes if you're eating healthy!? In fact, if you're smart about what you put into them, pancakes can become a really healthy meal packed full of nutrients. This banana nut protein pancakes recipe is high in protein due to the use of protein powder, nuts and egg whites as well as packed full of antioxidants and vitamins due to the banana.
Ingredients:
1 Scoop Vanilla Whey
1 Scoop Vanilla Whey
2 Egg Whites
1/4 cup Oats
1/2 large Banana
Handful of Walnuts
1 tablespoon Almond Milk
Pinch of Baking Powder
Pinch of Cinnamon
Coconut Oil
Method:
Step #1- Place all of the ingredients into a big mixing bowl and use a hand mixer to blend together or put all of the ingredients into a blender to combine.
Step #2- Once you have your ingredients combined, pour your batter onto a pan lightly coated in coconut oil.
Step #3- Let it cook for 2-3 minutes or until bubbles appear and then flip it over and leave it for an additional 2-3 minutes or until cooked through fully.
Step #4- Serve with slices of banana, crushed walnuts and a drizzle of coconut butter.
Tips:
* You can use any flavour protein powder you like; I just find vanilla usually works best but if you have a serious sweet tooth and want to use chocolate or strawberry that's okay too.
* You can swap cinnamon with any spices you would like; nutmeg is a great alternative.
* You can swap walnuts for any other nut you would like; brazil nuts, almonds, macadamias, pecans and hazelnuts all taste delicious as well.
