I love figuring out new ways that I can use quinoa and incorporate it into my meals so that was the inspiration for this recipe. Also, although I'm not vegetarian I do eat a very plant-based diet with little meat so am always searching for meat alternatives. This is a great recipe for vegetarians or if you are just trying to limit the amount of meat you eat because the protein from the quinoa means that you aren't lacking any of the nutrition you would get by eating meat.
Ingredients:
2 cups Cooked Quinoa
2 Egg Whites, 1 Egg Yolk
2 Shallot Stalks
1 Wholegrain Bread or Breadcrumbs
Handful Fresh Coriander
Handful Corn Kernels
Salt and Pepper
Coconut Oil
Method:
Step #1- In a bowl, whisk together all of the ingredients apart from the quinoa then fold that in last.
Step #2- Using your hands, make patties out of the mixture.
Step #3- Cook them in a pan with coconut oil over medium-high heat.
Tips:
* You can add spinach to this and it also tastes really yummy.
* Make it a little more interesting and to your taste by adding herbs and spices.
* My favourite way to eat these is on a wrap with avocado and heaps of other vegetables.
