DINNER RECIPE- LETTUCE CUPS

Let's face it, when we get home after a long day the last thing we feel like doing is whipping up a super nutritious and healthy dinner in the kitchen. Not only that, but it can be hard to figure out what to cook. So I thought I would share with you one of my go-to recipes for day like that because not only is it super delicious and healthy but it's also quite simple and quick to make.

Ingredients:
1 Pkt Quorn Mince (vegetarian meat substitute)
1 Tub Tomato Paste
1 Carrot
1 Onion
2 Corn Cobs
1 Pkt Vietnamese Noodles
1 Iceberg Lettuce

Method:
1. In a saucepan, add olive oil and onion then leave to simmer until browned.
2. Add the mince and tomato paste in with the onion and cover until simmering.
3. Add in the carrot and leave for an additional 5 minutes. Meanwhile place your Vietnamese noodles into warm water to soften.
4. Take the mince mixture of the heat then assemble the meal by placing the mince, noodles and corn in a lettuce cup.

I hope you enjoyed this recipe! Definitely try it out next time you're standing in your kitchen with no idea what to cook. Just make sure to have a bag of the mince in your freezer and to have stocked up on the essentials like lettuce, carrot, tomato paste etc.

There's those days when you feel lie being healthy is too much effort and the thought of putting together a nutrition packed lunch in daunting. I'm here to show you that preparing extremely healthy meals that are quick and delicious can be super easy. This is my go-to green lunch that I always have when I can't think of anything else to make and it has never failed me. I'm always left feeling full, satisfied and nourished.

Ingredients
Broccoli
4 Leaf Mix
1/2 Avocado
1/2 Lemon
Balsamic Dressing

Method
Simply chop up your broccoli and throw it in the steamer for 5 minutes. In the meantime wash some leafy greens, chop some avocado, drizzle with balsamic glaze and garnish with lemon. SPAGHETTI SQUASH RECIPE

I am a huge fan of pasta but let's face it, it's not the healthiest of options. So when I found out about a pasta substitute that has a similar taste and consistency but is instead made from a vegetable (squash) I immediately tried it. I must say I was impressed with how satisfying and delicious the meal was so will definitely be making this more often from now on.

Ingredients
- 1 Spaghetti squash
- Rocket
- Coconut Oil
- Salt & Pepper

Method
- Cut your spaghetti squash in half and scoop out the seeds.
- Rub in a bit of coconut oil all over the surface of the spaghetti squash.
- Bake at 180 degrees for 35 minutes then leave to stand for 10.
- With a fork, scoop out the insides of the spaghetti squash into a bowl.
- Mix through some coconut oil, salt, pepper and top with rocket.

I hope you enjoy trying this recipe out! Just a few extra steps involved than your usual pasta but much healthier and a guilt-free alternative.

AVO AND FETA SMASH WITH ROCKET AND A HASH BROWN

Recently I went to The Coffee Club where I ordered their avocado and feta smash. It was absolutely delicious but the whole time I was thinking that I could definitely make this kind of breakfast myself. So this weekend I went out, bought the ingredients and gave it a go. This recipe serves two portions, so why not make this to share with your sister, friend, mum or special someone.

ULTIMATE TOFU VEGAN STIR FRY RECIPE

Nothing beats a good stir fry and there's so many variations but I think I have found my absolute favourite so here is the ultimate recipe for a killer vegan stir fry.

Ingredients
1 pkt. Soft Tofu
1 Zucchini
1 Onion
Garlic Cloves
1/2 Egg Plant
1 cup Snowpeas
Pinenuts
Shell Pasta
Sesame Oil

Method
It's as simple as chucking everything in the wok; onion and garlic first then the vegetables. I like the cook the tofu in a separate pan to ensure it is thoroughly cooked then I use the same pan to brown the pinenuts. Have your pasta to the side cooking so that you can chuck it all together once the veggies and finished cooking.

I love serving this stir fry over some delicious shell pasta with a sprig of parsley or coriander on top.\

VEGETABLE QUINOA RECIPE

I'm always looking for new and different ways to pack heaps of veggies into a meal. This is what I whipped up quickly for dinner the other night and thought that it was so delicious I just had to share the recipe with you all. It not only includes lots of different veggies but it's also extremely filling and satisfying.

Ingredients
1 1/2 cups Quinoa
2 Garlic Cloves
1 Onion
1 Zucchini
1 cup Green Beans
1 Corn Cob
1 Carrott
Paprika
Salt & Pepper

Method
- Cook the quinoa with 1 part quinoa and 2 parts water.
- In a frying pan cook the onions and garlic in oil, salt, pepper and paprika.
- Cut up the vegetables and bring them to a boil.
- Once the three components (quinoa, onions and vegetables) have cooked through, toss them all together and serve.

I hope that you all give this recipe a go for lunch or dinner sometime. It would be the perfect kind of meal to whip up a heap of and then meal prep for the rest of the week with.
